Fried Rice


Our dinner gets more and more simple as it gets closer towards the end of the month.   The budget runs out...  March finished with only € 2.79 left!  Menu on the last day of March was also pretty simple, as a matter of course;Chinese style fried rice and wakame (seaweed) soup.  Fried rice is one of the things I used to eat the most in my childhood, as we always have leftover rice from the night before.  You can play with ingredients and flavor with whatever you like.  I used Nibuta pork but shrimp will also make a gorgeous dish.

Ingredients(serves 2)
2 cups cooked rice
1 cup Nibuta/Cha-syu
2 eggs
2 stalks of spring onion
2 tbs. vegetable oil
1 tbsp. sesame oil
Chinese chicken soup powder
1 tbsp. soy sauce

Directions
1. Chop spring onion.  Beat eggs in a bowl.
2. Heat 1 tbsp. vegetable oil in a wok over a high flame and make scramble egg.  Take it out of the wok and set aside.
3. In a same Wok, heat another tbsp. vegetable oil and 1 tbsp. sesame oil.  Add spring onion and fry for 1 min. Add pork and cook for another min.
4. Add rice, season with chicken soup, salt&pepper and fry over high flame for about 2-3 min.
5. Stir in scramble egg.  Then pour in soy sauce along the Wok surface (not over the rice) and cook for another 30 min.
