Ebikatsu






Menu for last night was...
 Ebikatsu (shrimp cake cutlet)
 Hourensou no goma-ae (sesame dressed spinach)
 Shio-kombu cabbage (shredded cabbage with salted Kombu-kelp)
 Multigrain rice 

...very Japanese!  Japanese food wasn't my most favorite when I used to live in Japan but I have more cravings for it since I left my homeland.  A simple hearty side dish like spinach goma-ae is perfect comfort food for me.  I always think that, it's a torture when you can't have what you really really wanna eat.  Dishes I can make with ingredients I get in Germany are somewhat limited and I always wonder...how are other expats dealing with this grooooesse Problem!!??        


It'd been long time since I had had Ebikatsu last time but it was definitely a hit and it's easy to make...if you have food processor and dish washer.  You can make more than a batch and make Ebikatsu-sandwich/burger the following day, like the famous Mos-burger (Japanese burger chain).  Here is the recipe of Ebikatsu.

Ingredients (serves 3-4)
...<for the cake>
500g/1.1pound of shrimp(fresh or uncooked frozen/without shell) 
1tbs sake
1 egg 
1 tbsp. mayonnaise
1 tbsp. lemon juice
1tbsp. potato starch 
2tbsp. flour 
salt&pepper
1 small onion

...<for the the batter>
1/2 cup flour
panko (bread crumbs)
1 egg

Oil for frying
bulldog brand fruit&vegi sauce (tonkatsu sauce) or tartar sauce, as sauce


Directions

1. Clean and devein shrimps, pat dry with kitchen paper.   Then put sake and a pinch of salt and lightly mix. 
2. Cut about 10 shrimps in chunks and set aside.
3. Chop onion and heat in microwave covered, for 2 min. 
3. The rest of shrimp goes into food processor or blender together with an egg.  Mix until smooth and fluffy.  
4. Add mayo, lemon juice, potato starch and flour, salt&pepper and mix until the powder is well blended.
5. Put 4 in a big bowl and add chunks of shrimp and onion (from step 2&3).
6. Prepare the line of batter; a plate/vat of flour, a wide bowl/vat of beaten egg and a plate/vat of panko.
6. Make hamburger-patty-formed cake of shrimp mixture (from step 5) and coat with flour, then egg and then panko just like making cutlet.
7. Deep fry in 170℃/330°F oil for about 6-7min. until golden brown.
